Short answer: In Hungary, goulash (gulyás or gulyásleves) is a soup: beef, onion and paprika in plenty of broth. The thick beef stew many visitors picture when they hear "goulash" is called pörkölt. At Bistrology, Dohány utca 30/a, you can have both, from 8:00 to 16:00 every day: goulash soup in a bread cup (5,190 HUF) or in a pot (4,990 HUF), and goulash stew with dumplings (5,990 HUF).

Goulash is a soup (and a national treasure)

If you grew up with a thick goulash at home, the Hungarian version may surprise you. Here, gulyás means soup.

Hungary's official register of national treasures, the Hungarikum Collection, added Hungarian goulash soup on 5 December 2017. Its official record describes a beef-based one-pot dish, made with plenty of broth, onion and paprika, with diced potato and csipetke, small pinched noodles. It also notes that a good goulash is made without roux, and that quality ground paprika is essential.

So when a menu in Budapest says "goulash", expect a spoon, not a fork.

Goulash, pörkölt, paprikás: a quick guide

  • Gulyásleves (goulash soup): Beef soup with onion, paprika and vegetables. Brothy, served in a bowl, a pot or a bread cup.

  • Pörkölt (for example marhapörkölt, beef pörkölt): Meat stewed in very little liquid with onion and paprika. Thick, rich sauce, often with dumplings (galuska).

  • Paprikás: Similar to pörkölt, finished with sour cream. Creamy and paler in colour.

On our menu, the soup is listed as Hungarian Goulash Soup, and the stew as Hungarian Goulash Stew with Dumplings. On our Hungarian menu card, the stew is marhapörkölt galuskával: beef pörkölt with dumplings. If you want the thick version, that is the one to order.

How to eat goulash in a bread bowl

Our goulash soup comes in a bread cup: bread, hollowed out and filled with the soup. A few tips for your first one:

  1. Start with the soup. Eat it while it is hot, before the bread soaks up too much of it.

  2. Then tear into the bread. It is part of the meal. Dip the pieces into what is left at the bottom.

  3. Don't feel you have to finish the whole loaf. Nobody is counting.

  4. Prefer a regular bowl? Ask for the goulash in a pot (4,990 HUF). Same soup, no bread to fight with.

One guest summed up their first try in a Google review: "We had our first goulash and it was fantastic."

Goulash for breakfast? Why not

Goulash sounds like lunch. We serve breakfast and lunch from the same menu all day, so nobody will look twice if you order goulash at 9:00.

That is handy if you are staying nearby and your days start late, or if you want to try a Hungarian classic and an omelette in the same sitting. A few combinations to try:

  • Goulash soup in a bread cup and a croissant, for the hungry and the curious

  • Goulash stew with dumplings (5,990 HUF) as a late brunch, after a long night in the ruin bars

  • Goulash soup in a pot (4,990 HUF) followed by a slice of warm apple pie with caramel sauce (2,690 HUF)

If goulash is not for you, try the forest mushroom soup served in a bread cup (4,890 HUF). If you have dietary requirements, please ask our team about the ingredients when you order.
